Crab, apple and leaf salad

I went for me weekly trip to the fresh fish van at the market today and they had some dressed crab, one of my favourite lunches and slimming world friendly too.  I then picked up a nice bag of pea shoot, baby garlic and chive salad along with a nice looking Braeburn apple and that was my lunch sorted.  Delicious and easy to prepare so I thought I'd share it.


Ingredients

1 dressed crab
1 Braeburn apple
1 packed of mixed leaves, whichever looks good
½ a lemon

Method

Pile some salad on a plate, then slice the apple with a mandoline until you have enough.  Squeeze the half lemon onto the apple to both stop it going brown and also as the salad dressing.  Add the crab on the top, clear away the dishes and sit down and enjoy something that takes so little time to get ready and tastes fabulous :)

If you wish, you can also get yourself some bread, but I don't find I need it really!  This would also make a great starter.
